  1. Interested in becoming a Eucharistic Minister? Requirements: at least 18 years old, Catholic in good standing. Training in October. Call Fr. Tony by Sept. 22. – 216-861-5343.
  2. The joint parish and CSM fund drive for the West Side Catholic Center expansion raised $6,100 --
     -- well above the original pledge of $4,500.
  3. The "Rectory Roof Project" has been completed at a cost of $14,000. "The new roof should keep us safe and dry for many years to come."

"The American Red Cross will hold a blood drive from 10 a.m.-2 p.m. next Sunday, Sept. 17, at St. Malachi Center. Please consider coming to church early or staying late to donate blood to this worthy cause. At present, we are in a blood emergency, which means there is less than one day’s supply of seven out of eight blood types. Surgeries are being postponed unless they are life threatening because of this. Your help is desperately needed. Last year, we doubled the donations expected. "Bill and I are walking in the Cleveland AIDS Walk on Sept. 17 in memory of our Billy, and again on Sept. 24 in the NE Ohio Race for the Cure in memory of our Mary. Nancy Gibbons

Nancy Gibbons, already noted for her culinary skills, made a big hit with her potluck contribution at our recent CSM Silver Anniversary evening at Blossom. (The nearly 50 participants had a wonderful time and are indebted to Rosemarie DeJohn, Ron Perger, Barb Parkowski and all involved with the event’s arrangements. Again was heard the now familiar phrase, "Why don’t we do this again next year?) At the request of a number of her salad consumers, she now shares the recipe with the rest of us:  

Nancy Gibbons’ Spicy Pork and Soba Noodle Salad

¾ to 1 pound whole pork tenderloin
  Spicy Oriental Marinade
  Salted water
2 teaspoons honey
1 medium red pepper, julienned
2 medium carrots, julienned 
4 ounces snow peas, halved lengthwise
8 ounces soba noodles (wheat spaghetti)
  Oriental Dressing 
  Chopped cilantro, to taste

Spicy Oriental Marinade

2 teaspoons oriental chili sauce
2 teaspoons sesame oil
½ cup hoisin sauce 
½ teaspoon oriental chili sauce
2 ½ tablespoons soy sauce 
3 tablespoons peanut oil
2 teaspoons honey
2 ½ tablespoons soy sauce

Oriental Dressing:

2 teaspoons minced garlic
1 tablespoon minced peeled ginger
2 tablespoons red wine vinegar
1 teaspoon honey
1 tablespoon soy sauce

 

 

 

Combine all Oriental Marinade ingredients in a bowl. Add pork and marinate in refrigerator overnight. Build a charcoal fire or preheat broiler. Meanwhile, bring a large pot of salted water to a boil. Add vegetables to pot and blanch quickly to set color. Remove vegetables, chill under cold water, drain and dry well. Add noodles to pot; cook until tender, drain well, transfer to a large bowl and toss with a little Oriental Dressing. Grill pork to temperature of 150 degrees. Cool, then slice crosswise into strips. Add to noodles along with vegetables. Add dressing, to taste. Mix well. Before serving, sprinkle with cilantro. Serves 4.
